Raclette

Blog 001

Can’t imagine ever tiring of fondue!!… however, if you’re looking for a meal that is just as delicious and fun, try Raclette, a magnificent melting cheese, soft & supple, creamy & delicious… definitely worthy of being in the spotlight this week on Moveable Feast’s blog!!  It’s a welcome change at dinner time… especially in the heart of winter when it’s cold outside and you and the kids or a group of friends are all huddled together and hungry!

Raclette fire

Raclette is an amazing Alpine cheese made from whole raw or pasteurized cow's milk, collected from cows that have been grazing on the nutrient rich pastures of the French and Swiss AlpsRaclette comes from the French word “racler” which means “to scrape”.  This ancient cheese dates back to the Middle Ages when shepherds would enjoy a scrumptious and satisfying meal by cutting a large wheel of cheese in half and holding it close to an open fire.  In just minutes after it started to melt an avalanche of luscious bubbling cheese would be scraped onto a dish and quickly consumed.

Mandy's plate

Many restaurants offer this fireside delight during the winter months.  But don’t dismay!  You don’t have to travel all the way to Europe to indulge your senses… nor do you have to worry about building a fire in your home!  A Raclette machine is a type of table-top electric grill that allows you to easily enjoy this treat right at your dinner table or kitchen counter.  Simply place a slice of Raclette on one of the small grill pans and place it under the grill itself.  Try not to drool as the outer layer starts to crinkle and darken, while the ivory colored inner layer starts to bubble.  The rich nutty, sweet and slightly fruity flavor is irresistible.  Yes, the rind is a bit stinky (as most wash-rind cheeses are!), but becomes savory and delicious when grilled.

Group at table

A Raclette party was just the excuse these St. Charles moms were looking for when they recently gathered to enjoy a kid-free evening filled with good company, GREAT food, and lots of fun!  Mandy VanLue called on Moveable Feast to supply her with our AMAZING Raclette cheese, pickled cornichons/gherkins, an assortment of salamis, and a few bottles of fruity reds and crisp whites from our hard to beat wine selection.  All Mandy had to do was boil some small potatoes (a must with Raclette!), prepare a fresh green salad, and voila!... a beautiful table was ready to go.  Mandy, an experienced Raclette hostess, was armed and ready with her own Raclette grill, but for those of you who aren't as well-equipped, Moveable Feast has them available in our retail store.

Last week I did a chef's demo at the Chicago Green City Market. During the growing season the market is held in Lincoln Park, but for the winter they've taken up residence in The Peggy Notebaert Nature Museum. The museum is a great venue for the market with lots of interesting exhibits to add to the experience. They also have a butterfly room where you can commune with hundreds of free-flying butterflies, which is really amazing.

MeandNate

The theme for the day's demos was 'meat and potatoes', so we made some lovely potato gnocchi and a rich tomato ragu with braised beef. It was perfect winter fare and definitely a unique take on the theme. Some of you may recognize my friend Nate, there in the photo looking sharp in his chef's whites.  Nate is a pilot, but back in the day he worked at Charlie Trotter's.  He was nice enough to come out to assist me so the rest of the MF crew could keep things together back at the shop.  Thanks, Nate!  You can learn more about the Chicago Green City Market at their website, and we'll keep you posted on any upcoming demos or talks we'll be doing. If you don't want to travel all the way to the city, you'll be able to catch us at the Geneva Green Market for several demos this summer too. See you there!

Calling all brides....

Img_GenWedWalk

Moveable Feast started off the year by becoming part of Geneva bride wedding walk 2009! Despite the chilling temperatures, brides & friends were troopers as they strolled through historic downtown Geneva.

  IMG_2080

Geneva Bride was started by a few dedicated, wedding-focused businesses working to create picture perfect weddings in Geneva. These few turned into a network of the best locations in Geneva working together to make your wedding planning a breeze.  Now Geneva Bride has become the ultimate resource for anyone getting married in Geneva.

After visiting a few featured businesses around town, everyone met back at The Herrington where all the businesses had booths set up to educate the brides on their wares or services.  Each registered bride also received a custom wedding planner with detailed information on all the participating businesses.

Moveable Feast's booth showcased festively wrapped cookie favors, Carol’s cakelets, wedding cakes and more!

More to come…

Geneva Bride is currently working on a second wedding walk scheduled for the summer to be hosted at the Geneva Commons.

on a hiiiiiiigh-way to... moveable feast?

Acdc

While over the years we've had the opportunity to cook for some pretty high-profile clientele, we try not to be too obnoxious with the name-dropping. Sure, we've whipped up omlettes for Garth Brooks, gently folded aged Wisconsin cheddar into mac & cheese to sustain the Obama's on the campaign trail, and of course baked some deeply, deeply fudgey brownies for Oprah. But I don't think I've ever seen the kitchen crew light up like they did last week when I told them we were making lunch for AC DC. Within minutes the kitchen stereo was thumpin' and heads were bobbin' as Brian Johnson whaled out the lyrics to Back in Black.

Damonchris

So, what do you cook for Legends of Rock such as these? Spaghetti Bolognese was their special request. Here are Damon and Chris working on the sauce while laying down a few licks on the air-guitar-spatula. All in a day's work here at the Feast...

now here's a swell idea...

Ladies drinking

Two of our favorite regular customers, Sylvie and Anne, were in for lunch the other day and they had quite a brainstorm... Here they are enjoying a bottle of our Cellar Vilafranca Castellar Cava, a delicious sparkling wine from Spain. That's right... wine is not just to bring home! If you ever want to enjoy a glass or bottle of wine with your meal here at the Feast let us know and we'll be glad to open one for you. We even have nice wine glasses so you don't have to use a plastic cup! Now that's civilized!

WINE IS HERE!

Menu bottles

As we begin a new year one of the things we are really excited about is our new wine department! Our focus is on food friendly wines that are hand-crafted by smaller or family owned wineries and that offer exceptional value. As with our food, we wanted to make the wines really accessible, so most of the bottles we carry are under $25. So, stop in to peruse our selections or grab a bottle the next time you're picking up food for dinner. And of course, we would be happy to help with custom wine selections to compliment the menu at your next event.
